Spring has sprung, and the warm sunshine brings thoughts of pleasant outdoor activities, the generosity of Nature’s own grocery cupboard, and perhaps enjoyable daytrips on lakes, canals, or at sea. If you haven’t yet decided where to holiday or spend a long weekend this year, now is the time!
What makes pickled herring so tasty? Admittedly, not everyone loves herring, so perhaps I should take that back. No, actually! Pickled herring is incredibly nice and can be varied in so many ways; by adding creamy sauces or using clear pickling liquids with onion, herbs and spices. I could go on describing all my favourites forever.
On Friday 22 June Swedes will mark the arrival of the sunny season by taking part in traditional Midsummer Eve celebrations. After the Sweden’s dark winters, this National Day is well deserved, with Midsummer Eve one of the lightest of the year and a magical occasion. Maypoles are raised in villages and cities across the country and everyone tucks into a traditional Midsummer feast, including pickled herring, boiled new potatoes with fresh dill, soured cream and red onion – as well as fresh strawberries and schnapps!
