Picnicking is a summer activity centred around food, friends, family and lazy days in the sun. Bring a portable barbecue to cook your fish, meat or vegetables. The fish could be freshly caught in a lake in a remote part of Dalsland or coastal mackerel from Grebbestad – it’s a matter of personal taste, and a difficult choice. Try both and give yourself an unbeatable experience of what the unspoilt Swedish nature has to offer.

Another delicious option is a picnic basket filled with locally-made, artisan cheeses, nice drinks and cold meats, such as thick slices of turkey, with a crispy salad. Spread your blanket in the nearest park, for example the ever popular Slottsskogen in the heart of Gothenburg. The centrally located Garden Society of Gothenburg, an oasis in the city, is a place where children can play and adults can enjoy beautiful flowerbeds and old-fashioned greenhouses in colonial style.

A cycling trip with a blanket strapped to the luggage rack is a summer activity to experience in Västergötland. Why not stop off at the cheese-makers Sivans ost, right in the middle of the “plain”. Make yourself comfortable and try lots of different types of mature cheeses, bakery items and handmade chocolates. Västergötland has definitely made a name for itself as the place to enjoy local specialities. Different types of drinks included. One of my favourite things to do is to take some newly harvested salad vegetables and quickly combine them into a salad. Because when the weather is at its most pleasant, all I want to do is to be outside and enjoy the sunshine. This also makes me think of fresh shellfish and newly smoked fish – so amazingly tasty to enjoy on a smooth rock in Bohuslän after a swim in the sea.

On the topic of al fresco eating, Global Picnic is an event that will take place at the end of August. This is where multicultural Gothenburg will be on display for two intensive days. Smoking barbecues, bubbling saucepans and well-filled sandwiches. The flavours come from all over the world and this is a unique opportunity to meet people from different cultures. Who have all come here for one reason – to tell their stories through their food. Late summer joy with a picnic in the city centre. Get out there and enjoy it!



Summer salad with sweet strawberries and smooth goat cheese
Serves 4

1 litre strawberries
1 head of lettuce
1 onion
200 g goat cheese, e.g. chèvre


Juice of ½ lemon
1 tsp. grated lemon peel
1 tbsp. apple cider vinegar
2 tbsp. olive oil
1 tsp. runny honey
Salt and freshly ground black pepper

Remove the stems from the strawberries and divide into smaller pieces. Wash the lettuce and tear into smaller pieces. Thinly slice the onion. Use a fork to crumb the cheese. Arrange in a bowl and mix the dressing. Drizzle over the salad and enjoy with a tasty bread, either toasted or as it comes.


Shellfish salad with egg and mustard vinaigrette
Serves 4

1 kilo langoustines or prawns
4 eggs
200 g spinach
1 bunch of radishes
200 g fresh haricots verts or other green beans
½ cucumber
50 cl finely chopped fresh herbs, e.g. dill, parsley and chives


50 ml rapeseed oil
3 tbsp. apple cider vinegar
1 tbsp. Swedish mustard
1 tsk Dijon mustard
1 tsp finely grated horseradish
1 tsp runny honey
Salt and freshly ground black pepper

Peel the prawns or langoustines. Boil the eggs until soft, about 3-4 minutes. Wash the lettuce and thinly slice the radishes. Blanch the beans in boiling water for a minute or two, before rinsing in cold water. Peel the cucumber and cut into smaller pieces. Mix in a bowl and fold in the herbs. Mix all the ingredients for the dressing and serve with the salad.
